Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed employee drinks on prep table, on shelf. Person in charge removed. **Corrected On-Site**
16-13-5    Basic - Equipment and utensils not washed, rinsed and sanitized in the correct order in three-compartment sink. Do not use dishes/equipment not properly sanitized. Observed triple sink at bar set up with only wash and sanitize compartments. Employee at bar states they wash, sanitize, then rinse dishware. Spoke to employee, who set up triple sink in correct order. **Corrective Action Taken**
08B-38-4    Basic - Food stored on floor. In walk in cooler case of chicken on floor. Also, in walk in freezer cases of food on floor. Also, items cooled below 41F uncovered. Person in charge raised and covered. **Corrected On-Site** **Repeat Violation**
14-13-4    Basic - Food-contact surface not smooth and easily cleanable. Edge of ice bucket broken, missing pieces.
36-24-5    Basic - Hole in or other damage to wall. Hole in wall along baseboards by triple sink. Also observed hole in wall behind hot holding unit by prep area.
14-42-4    Basic - Hood filter missing from automatic fire suppression/exhaust system. Missing hood filters over oven by prep area. **Repeat Violation**
10-14-5    Basic - Ice bucket/shovel stored on floor between uses. Observed two ice buckets stored on the floor. Person in charge raised. **Corrected On-Site** **Repeat Violation**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Missing sign and papertowels from bar hand wash sink. Person in charge provided. **Corrected On-Site**
29-18-4    Basic - Pipe cover(s) missing. Missing cover from pipe outside front door. Person in charge placed something over pipe and has called city. **Corrective Action Taken**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed one can queso in dry storage with dent along seam. Person in charge segregated to be returned during inspection.
01B-24-5    High Priority - Ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days after opening/preparation. See stop sale. In walk in cooler black eyed peas date marked 1/13. **Repeat Violation** **Admin Complaint**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In fliptop in kitchen cheese 57F. Item stored in container resting on another container of cheese and above fill line. Person in charge moved to lower part of unit. In dessert cooler in server area cheesecake at 50F. Cooler shelves lined with tinfoil preventing airflow. Also person in charge states has been in unit stocking this morning. 29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing backflow preventer from hose bibb with splitter under triple sink on side with red hose attached.
53A-03-7    Intermediate - Food manager certification expired. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ One manager with training expired 12/2022.
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One employee with expired training 12/2022.
45-02-4    Portable fire extinguisher gauge in red zone. For reporting purposes only. Fire extinguisher by triple sink in red zone. **Repeat Violation**
