A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Approximately 3 small flying insects on electric cord and trays of sealed bread near roll up door by main walk in.
Approximately 5 small flying insects on prep table not in use in main prep area in kitchen.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Parking lot trailer milk cooler - milk 50F - per operator establishment received delivery approximately 2 hours ago at 6:30am. Milk out of temperature for less than 4 hours. Operator added ice and moved items to freezer to quick chill. **Corrective Action Taken** **Admin Complaint**
Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit.
Digital electronic ambient thermometer not transmitting from the Parking lot trailer milk cooler. Operator showed inspector on cell phone. **Warning**
Intermediate - Handwash sink used for purposes other than handwashing.
Towel and food debris in hand sink by dish machine. Reviewed proper use of hand sinks. Operator removed items. **Corrected On-Site** **Warning**
Propane tank (larger than 2.7 lb. water capacity/1 lb. gas capacity) located inside of the building. For reporting purposes only.
Storage room containing cleaning chemicals. Inspector will email inspection report Fire Marshall for review.
