Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed in kitchen area.
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Observed behind fryers. **Repeat Violation**
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed at the front counter. **Repeat Violation**
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed in rice container.
33-16-4    Basic - Open dumpster lid.
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. **Repeat Violation**
08B-12-5    Basic - Stored food not covered. Observed cooked pasta not covered inside walk-in cooler. Manager covered during inspection.
33-31-5    Basic - Unnecessary items/unused equipment on the premises. Observed at the front counter and next to dry storage. **Repeat Violation**
36-02-5    Basic - Unsealed concrete floor in food preparation, food storage.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed throughout kitchen. **Repeat Violation**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. **Corrected On-Site** **Repeat Violation**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw steak stored above raw pork inside walk-in cooler. Manager rearranged properly during inspection. **Corrected On-Site**
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Observed weevils a flour container at the dry storage area. Managers discarded during inspection.
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Provided form during inspection inspection.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soiled white cutting board, in kitchen area.
11-26-1    Intermediate - No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Provided form during inspection inspection.
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked pork and cooked noodles not date marked inside walk in cooler, as per manager over 24 hours.
