Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Two utensils in bucket of standing water at end of cook line. Employee dumped water and replaced utensils. **Corrected On-Site**
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Frozen pork and frozen calamari sitting at room temperature to thaw. Employee moved both back to walk in cooler. **Corrected On-Site**
22-43-4    High Priority - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Triple sink reading 50ppm quaternary. Employee added more tablets and correctly reading 200ppm quaternary. **Corrected On-Site**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In walk in cooler, container of raw seafoods above container of cooked pasta. Employee rearranged to properly separate. **Corrected On-Site**
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Bulletin provided to be posted. **Corrective Action Taken**

41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Unknown substance in bottles in kitchen and at bar. **Repeat Violation**
