Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

02D-03-4    Basic - Label on a food item prepared and packaged onsite for customer self-service does not include product identity/description, date product was packaged and name and address of the establishment that prepared and packaged the food. Observed milk desserts, fruit bowls and flans no labeled **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed exterior of ovens and grill soiled.
08B-12-5    Basic - Stored food not covered. Observed cooked shredded beef, cut ham,breaded beef, inside walk in cooler no covered. **Repeat Violation**
22-16-4    Basic - Walk -in cooler interior/shelves have accumulation of soil residues.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed inside walk in cooler shelves rusted, **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed throughout the kitchen. **Repeat Violation**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw ground be stored over sacks of red onions inside walk-in cooler. Manager stored raw ground beef on bottom shelf away from unwashed produce. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at steam table front counter rice (129F - Hot Holding); yellow rice (130F - Hot Holding). Out for Two hours. Cook too rice containers to kitchen to reheat to 165 **Corrective Action Taken**
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade soiled. **Repeat Violation**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed spoons and containers inside hand wash sink at kitchen area. Manager removed items from inside hand wash sink. **Corrected On-Site** **Repeat Violation**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed shredded beef at walk in cooler, flans prepared on site according to manager the day before, no date labeled. **Repeat Violation**
