Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. In walk-in cooler, raw beef skewers over unwashed lemons and squash. Also in outside walk-in cooler raw ground beef stored over raw beef. **Warning**
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. In inside kitchen walk-in cooler:; cooked octopus (49F - Cold Holding); Gouda cheese (49F - Cold Holding); cooked rice (47F - Cold Holding) overnight per operator. **Warning**

In inside kitchen walk-in cooler:; cooked octopus (49F - Cold Holding); Gouda cheese (49F - Cold Holding); cooked rice (47F - Cold Holding) overnight per operator. Also Cook line reach-in cooler right:; raw lamb (51F - Cold Holding); raw chicken (59F - Cold Holding); raw fish (70F - Cold Holding); cooked eggplant dip (59F - Cold Holding) and Cook line reach-in cooler left: ; goat cheese (48F - Cold Holding); cut tomatoes (48F - Cold Holding); blue cheese crumbles (54F - Cold Holding) for 2 and a half hours per operator. Provided operator with time as a public health control form and discussed with operator labeling with discard times and how to fill out form. Operator labeled coolers with time stamp and began filling out form. *corrective action taken* Also in Outside walk-in cooler:; raw chicken (45F - Cold Holding); raw ground beef (46F - Cold Holding); raw pork (45F - Cold Holding) for 3 hours per operator. Operator states walk-in cooler door was opened to outside for food delivery and often during busy lunch service. Operator opened connected walk-in freezer doo for quick cooling. In thirty minutes all food items dropped in temperature by 2F, *corrective action taken.* This is a repeat violation from 7/28/2022. **Repeat Violation** **Admin Complaint**
