Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-07-4    Basic - Employee wearing jewelry other than a plain ring on their hands/arms while preparing food.Employee wearing watch.
38-01-4    Basic - Light shield damaged/in disrepair.Missing light shield over dry rack.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.Hood filters over grill have grease build up.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle.Leak at hand sink by walk in cooler.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.Honeydew kept on buffet area for less than 4 hrs with temperature of 45F . Parfait kept on buffet area for les than 4 hrs with temperature of 56F, milk kept on buffet area for less than 4 hrs with temperature of 50F. Per cook they discard foos after 2 hrs but at this time no time mark or time control was provided. Heavy cream kept on reach in cooler across from cook line with temperature of 47F, liquid eggs kept on reach in cooler across from cook line with temperature of 45F. Operator decided to throw away. **Corrective Action Taken**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Operator decided to throw away. **Corrective Action Taken**
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
