Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-73-4    Basic - Floor soiled/has accumulation of debris. Observed under the cookline by the fryers.
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed at the cookline.
08B-38-4    Basic - Food stored on floor. Observed canned sodas,plastic bottled drinking water stored on the dry storage floor. **Repeat Violation**
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior of microwave soiled with accumulation encrusted food debris. **Corrected On-Site**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed opposite sandwich,ceviche station.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed reach in cooler gaskets soiled,sandwich unit. 14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed in the walk-in cooler.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed at the ware washing area, behind cookline.,by hand wash sink,opposite cookline.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine strength at 0ppm, operator set up 3 compartment sink and called service technician. **Corrective Action Taken**
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed raw chicken stored above cooked beef located in the walk-in freezer.
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored above raw beef,located in the walk-in cooler. **Corrected On-Site**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed sanitizer bucket stored in unit at the front counter. **Corrected On-Site** **Repeat Violation**
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chlorine test strips available at the time of the inspection.
