Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-24-5    Basic - Hole in or other damage to wall. Wall damage around back door, by back hand wash sink. Debris on wall by back hand wash sink. Observed porous ceiling tiles with water damage in kitchen.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Side of fryers with grease buildup. Visible debris buildup on exterior portion of bags used to line containers in direct contact with bulk food items.
08B-12-5    Basic - Stored food not covered. In walk in cooler observed multiple items uncovered. Also, oil under cookline at kitchen not at least 6 inches off of the floor. **Repeat Violation**
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Water leaking from back hand wash sink, also slow draining.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In walk in cooler raw chicken stored over prepped raw onions, also in reach in freezer no longer commercially packaged chicken stored over shrimp. 03F-02-5    High Priority - Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. 03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Soup at 125F, person in charge began reheating. **Corrective Action Taken**
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Chlorine sanitizer bucket at 200+ ppm, observed rebleaching of strip. Person in charge remade to 100ppm. **Corrected On-Site** **Repeat Violation** **Admin Complaint**
14-16-4    Intermediate - Multiuse food-contact surface not smooth, free of breaks/cracks/chips/pits/crevices. Observed multiple containers holding food products with breaks, edges missing.
