A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.
White fish in vacuum sealed bags thawed in walk-in cooler without being removed from reduced oxygen environment. Person in charge sliced open all bags. **Corrected On-Site**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
1) single door small reach in cooler gaskets soiled with black/green mold like substance
2) flip-top cooler gaskets soiled with food debris. **Repeat Violation**
Basic - Plumbing system in disrepair.
Plumbing line at T connection under hand washing station near ice machine in disrepair. Pipe pops off T connection. Person in charge contacted maintenance department. **Corrective Action Taken**
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
Raw chicken above raw beef Patties. Establishment may serve Burger under cooked if requested. Person in charge rearranged reach in cooler. **Corrected On-Site**
High Priority - Stop Sale issued due to food not being in a wholesome
1) Carafe of milk and bowl of butter pats left out 3 hours past the establishments time as a public health controls written procedures.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.

High Priority - Time/temperature control for safety food held using time as a public health control not discarded at the end of the 4-hour/6-hour period. See stop sale.
Carafe of milk and bowl of butter pats from mornings breakfast service per person in charge not discarded at end of breakfast as stated in establishments written procedures. Discussed with person in charge.
Intermediate - No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.
Establishment lacking an independent way to test hot water sanitizer. Discussed with person in charge.
