Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Employee cleaned up. **Corrected On-Site** **Warning** - From follow-up inspection 2022-09-13: 1) 3 dead roaches outside of walk-in cooler and old walk-in cooler being used as storage room. 2) 7 dead roaches in in alcove used to store fry oil machine. 3) 1 dead roach in dry good storage room near prep table. **Time Extended** **Corrective Action Taken** - From follow-up inspection 2022-09-13: 1) 1 dead roach under hand washing station sink in dish area. 2) 1 dead roach under prep table in kitchen. 35A-02-6    High Priority - - From initial inspection : High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area. 1) 3 flying insects in dishwashing area. 2) 60 flying insects in dry-good storage and food prep area. Open raw white fish exposed with flying insects landing on fish. 3) 50 flying insects in old walk-in cooler used for dry good storage and bag n box machine. Person in charge started having employees clean both rooms. **Corrective Action Taken** **Repeat Violation** **Admin Complaint** - From follow-up inspection 2022-09-13: At call back violation not observed. Operator has cleaned up standing water and rotten food in both storage rooms. **Time Extended** **Corrective Action Taken** - From follow-up inspection 2022-09-13: 1) 1 live roach trapped under metal wall and metal floor in entrance of old walk-in cooler used as dry storage. 2) 1 live roach walking across dish washing areas floor.
