Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Throughout the kitchen area, specially where the wood burning pit. **Repeat Violation**
32-12-5    Basic - Covered waste receptacle not provided in women's bathroom. Observed employees restroom also available for female employees lacks a waste receptacle with cover.
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed cutting boards with cuts and groves at prep area. **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed an air gap at bottom of back exit door.
36-68-5    Basic - Hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling. Observed a lack of ventilation by soiled tiles next to open pit fire.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient thermometer in reach in coolers **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets of walk in cooler and freezer soiled.
16-46-4    Basic - Old labels stuck to food containers after cleaning. Observed old labels in ready to use containers at Dish washing station
08B-12-5    Basic - Stored food not covered. Observed food prepared and stored uncovered in reach in coolers. **Repeat Violation**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Observed mop not stored in a manger that would air dry. By ice making machine
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed bottles containing dressing not labeled at reach in salad station.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw fish stored above butter in reach in cooler next to grill. Manager had the fish relocated to the bottom of the reach in. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed cutting boards soiled at prep area. **Repeat Violation**
