Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed metals pots not inverted on rack next to storage area. Observed soup bowls not inverted at cook line. **Repeat Violation** **Warning**
Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed raw tuna stored inside reduced oxygen packaging at reach in cooler at sushi area. As per employee, item has been thawing inside reach in cooler since previous night. **Warning**
Basic - In-use knife/knives stored in cracks between pieces of equipment. Observed knife stored between reach-in coolers at cook line. **Repeat Violation** **Warning**
Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient thermometer on reach in coolers located at cook line. **Repeat Violation** **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soda gun holster soiled with slimy substance and not draining properly at bar area. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed eggs stored above sauces at walk-in cooler.
Manager removed eggs and placed them at bottom of shelf. **Corrected On-Site** **Warning**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Observed raw tuna stored inside reduced oxygen packaging at reach in cooler at sushi area. As per employee, item has been thawing inside reach in cooler since previous night. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Bean sprouts (54F - Cold Holding) at reach in cooler at preparation area. As per employee, item was placed inside reach in cooler appropriately 2 hours prior. **Warning**
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233.
Observed food employees:
Farah, Johnny, Pedro, Ying, Eduardo, Jennifer, employee more than 60 days. No proof of employee training. **Warning**
