Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Both ice machines, at the front counter and by the fish area.
14-01-5    Basic - Bowl or other container with no handle used to dispense food. Steam table in the kitchen: bowls with no handles stored inside pans with cooked rice. **Corrected On-Site**
36-03-4    Basic - Cove molding at floor/wall juncture broken/missing. Approximately 10 broken/ missing wall tiles. **Repeat Violation**
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Most cutting boards. **Repeat Violation**
14-11-5    Basic - Equipment in poor repair. Observed the lids for the reach in freezer in front of the cookline not attached to the unit. **Repeat Violation**
36-22-4    Basic - Floor area(s) covered with standing water in the ware wash area and the fish market prep area.
36-73-4    Basic - Floor soiled/has accumulation of debris on the floor of the walk in freezer.
08B-38-4    Basic - Food stored on floor. Front counter: 3 cases of limes stored on the floor.
21-04-4    Basic - In-use wet wiping /paper towels used under cutting board. Prep table in the kitchen.
16-04-4    Basic - No drainboards or equivalent provided for soiled items and/or air drying cleaned items. Main kitchen, ware wash area **Repeat Violation**
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Stand up reach in cooler in the main kitchen.
21-10-4    Basic - Soiled dry wiping cloth in use. Observed in the kitchen, employee wiping prep table with a soiled wiping cloth. Operator coached employee and discarded the soiled wet wiping cloth.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. New prep area. **Repeat Violation**
22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed in the kitchen, employee wiping prep table with a soiled wiping cloth. Operator coached employee and discarded the soiled wet wiping cloth. Observed operator wipe the prep table with a wet sanitized cloth during the inspection. **Corrected On-Site**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Walk in cooler: raw shell eggs stored above cases with heads of lettuce. **Corrected On-Site**

31B-03-4    Intermediate - No soap provided at handwash sink. New prep area. **Corrected On-Site**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Stand up reach in in the kitchen: cooked spaghetti and cooked pork not date marked. As per operator, cooked 2 days ago.
