Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-01-4    Basic - Floor not cleaned when the least amount of food is exposed throughout the kitchen area.
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed floor soiled with accumulation of food and debris at walk in cooler chicken station.
08B-38-4    Basic - Food stored on floor. Observed oil container stored on floor next to steam table. Operator moved the container to a shelf. **Corrected On-Site** **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting boards at preparation area.
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers at walk in freezer and walk in cooler with glass shield. **Repeat Violation**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees located at preparation area next to reach in cooler and women and men bathrooms. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed walk in cooler and walk in freezer gasket soiled. And exterior of ice machine soiled. And spray hose soiled at three compartment sink at chicken station. **Repeat Violation**
24-18-4    Basic - Silverware/utensils stored upright with the food-contact surface up at front counter.
29-49-6    Basic - Standing water in bottom of two reach-in-cooler at preparation area.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses at preparation area. **Repeat Violation**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed sugar containers not identified by common name at front counter and squeezes bottle at shelf on preparation table not identified by common name. **Repeat Violation**
08A-02-6    High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed raw beef and raw fish stored over French fried. Manager relocated the products. **Corrected On-Site**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw fish stored over butter and vegetables. And raw veal stored over cooked soup and sauces at walk in cooler. Operator relocated the products. **Corrective Action Taken** **Repeat Violation**
08A-17-6    High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed raw beef stored over calamari at walk-in freezer. Operator started to relocate the products. **Corrective Action Taken**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed ea food mix (45 F - Cold Holding) at reach in cooler preparation area. As per the manager for less than two hours. Manager added ice for rapid cooling. **Corrective Action Taken**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chicken broth (88 F - Hot Holding) at reach in cooler. As per manager for less than two hours. Manager moved the product to the stove to reheat. **Corrective Action Taken**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb under three compartment sink chicken station.
29-42-4    High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet.
53A-10-4    Intermediate - Certified food manager unable to answer basic Food Code questions pertaining to safe operation of establishment. Observed the FMC unaware how to calibrate the thermometer.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed hand wash sink blocked by ice cooler at front counter and front line chicken station. Operator moved the ice cooler. **Corrected On-Site** **Repeat Violation**
