Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Observed employee back pack also hand bag stored on the prep table underneath. **Repeat Violation**
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed onions peels spilled on the floor in the walk in cooler.
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Observed rusty shelves inside reach in cooler located on the cook line.
29-49-6    Basic - Standing water in bottom of reach-in-cooler. Observed standing water in the bottom of the reach in cooler on the cook line, Chef notify engineering. **Corrective Action Taken**
01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Temperature scallops 46°f stored inside cooler overnight per Chef.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Checked temperature of scallops 46°f, shrimp 48°f stored overnight inside reach in cooler.
01C-05-4    Intermediate - Clam/mussel/oyster tags not maintained in chronological order according to the last date they were served in the establishment. Observed clam tags not kept in chronological order.
53A-03-7    Intermediate - Food manager certification expired. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager/ Dylan Beck expired 9/5/2022 spoke to Chef concerning the Food Manager Certification.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed two white cutting boards has black stains left on the surface.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed mop bucket stored in the front of hand wash sink. **Corrected On-Site**
02B-01-5    Intermediate - Menu does not identify which items contain raw or undercooked animal foods covered by the consumer advisory. Observed tuna poke tacos has raw tuna served in the tacos not identify on menu. Chef notify Manager changed menu immediately.place asterisk on menu **Corrected On-Site**
48-01-5    No current insurance inspector boiler report or boiler certificate available for boiler. For reporting purposes only. Boiler certification has expired 3/16/2023
