Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Observed hanging salami (78F - Cold Holding), container states to keep refrigerated, operator stated item has been hanging for multiple weeks in refrigerated. See Stop Sale. Observed display main case - chicken pot pie (45F - Cold Holding); potato salad (44F - Cold Holding); 8 potato knish (45F - Cold Holding); 5 sweet potato knish (45F - Cold Holding); meat knish (47F - Cold Holding); spinach knish (47F - Cold Holding); lettuce cut (47F - Cold Holding); cut tomatoes per operator meat knish, chicken pot pie, potato knish, sweet potato knish, spinach knish, lettuce, tomato were stored in unit for multiple days, see Stop Sale. **Warning** - From follow-up inspection 2022-11-17: Observed walk-in cooler, brisket at 47°F, beef tongue at 48°F, corned beef at 47°F, potato cakes at 47°F. Per operator cooler was service and observed thermostat knob improperly set from service. items have been stored in walk-in cooler overnight and not moved. See Stop Sale. **Time Extended**

Observed hanging salami (78F - Cold Holding), container states to keep refrigerated, operator stated item has been hanging for multiple weeks in refrigerated. See Stop Sale. Observed display main case - chicken pot pie (45F - Cold Holding); macaroni salad (46F - Cold Holding); potato salad (44F - Cold Holding); 8 potato knish (45F - Cold Holding); 5 sweet potato knish (45F - Cold Holding); meat knish (47F - Cold Holding); chicken salad (46F - Cold Holding); spinach knish (47F - Cold Holding); lettuce cut (47F - Cold Holding); cut tomatoes (46F - Cold Holding); beef tongue (46F - Cold Holding); pastrami (47F - Cold Holding); per operator meat knish, chicken pot pie, potato knish, sweet potato knish, spinach knish, lettuce, tomato were stored in unit for multiple days, see Stop Sale. Other items noted were moved from production cooler or walk-in cooler this morning around 11 am and stored. Operator removed and stored items in freezer to rapidly cool. Observed potato cakes (45F - Cold Holding); brisket cooked (46F - Cold Holding); pasta (45F - Cold Holding);, per operator items were left out on counter while stocking units this morning and stored back into walk-in cooler. Advised operator to remove products from walk-in into container to be relocated. **Corrective Action Taken** **Warning** - From follow-up inspection 2022-11-17: Observed no hanging salami at front counter. Observed display main case with no food items stored in unit. Observed walk-in cooler, brisket at 47°F, beef tongue at 48°F, corned beef at 47°F, potato cakes at 47°F. Per operator cooler was service and observed thermostat knob improperly set from service. items have been stored in walk-in cooler overnight and not moved. See Stop Sale. Also observed raw hamburger meat at 47°F, Raw Steak at 46°F in bottom of walk-in cooler. Operator removed and stored in freezer to rapidly cool. Items stored overnight. **Time Extended**
