Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Basic - In-use utensil stored in cracks between pieces of equipment.
Observed spatula stored between flat top grill and cooler at cook line. Operator removed. **Corrected On-Site**
High Priority - Employee touched soiled apron/clothes and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands.
Observed employee wipe hands on apron while wearing gloves. Advised employee hand wash and glove changed is required after touching clothing/apron. Employee removed gloves and washed hands. **Corrective Action Taken**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
Observed home fries (116°F - Hot Holding) on flat top grill at cook line. Per operator, home fries were cooked approximately 30 mins prior to inspection. Operator put home fries on flat top grill to reheat to 165°F. **Corrective Action Taken** **Repeat Violation** **Admin Complaint**
Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment.

Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed can opener soiled with food debris. Operator discarded can opener. **Corrected On-Site**
