Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. -Observed employee cellular phone stored in plate used to serve customer. Operator removed plate and send to dishwashing area to be washed and sanitize. **Corrective Action Taken**
08B-38-4    Basic - Food stored on floor. -Observed several uncovered containers with TCS foods stored on walk-in freezer and cooler floor. **Repeat Violation** **Admin Complaint**

31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. -Observed no handwash sign at a hand sink next to cookline.

06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. -Observed fish thawing in standing water at prep sink.
14-17-4    Basic - Walk-in cooler shelves with rust that has pitted the surface.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. -Observed accumulation of black substance buildup on wall next to cooking oil tank.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer solution at dishwashing machine at 00 ppm.
10-05-5    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit. -Observed in-use scoops stored in unclean water at 37°F. Operator discarded and place scoops in hot water at 184°F. **Corrected On-Site**
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. A poster has been given to the operator.
53A-01-7    Intermediate - Manager or person in charge lacking proof of food manager certification. **Repeat Violation** **Admin Complaint**
53A-05-6    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. 02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. -Observed no date mark on cooked chicken stored in walk-in cooler. Per operator, chicken was cooked on 03/22/2023.
