Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-02-5    Basic - Unsealed concrete floor in food storage, warewashing area in main kitchen area.
14-17-4    Basic - Walk-in cooler shelves with rust that has pitted the surface in back kitchen area.
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed in dry storage in dish room area 3 dented cans of diced red peppers Person in charge voluntarily discarded. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Repeat Violation**
03C-89-4    Intermediate - Establishment conducts non-continuous cooking of raw animal foods without written procedures approved by the division. Observed in Walk in cooler par cooked Chicken wings. Person in charge stated That they do not have a system in place. Educated Person in charge on non continuous cooking procedure for raw animal foods and emailed Person in charge forms.
11-26-1    Intermediate - No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Educated Person in charge on employee health agreement and emailed a copy to Person in charge
