Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-38-4    Basic - Food stored on floor. Box of syrup stored on floor in storage shed behind building. Box of tea bags stored on floor in server station. Manager placed box on shelf during this inspection. **Corrective Action Taken**
33-19-4    Basic - Garbage on the ground and/or pad around dumpster. Trash scattered on ground around dumpster beside building.

01B-02-5    High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Inside reach-in cooler at cookline: sausage patties (52F - Cold Holding). Employee stated the sausage Pattie's were stored inside unit overnight.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside reach-in cooler at cookline: sausage patties (52F - Cold Holding). Employee stated the sausage Pattie's were stored inside unit overnight. Stop sale issued. sausage links (72F - Cold Holding), cheese (62 - Cold Holding) manager stated sausage links and cheese were placed into the unit from the walk-in cooler approximately two hours prior and placed both into the freezer to cool to 41F. Inside make-table at cookline: shell eggs (74F ambient - Cold Holding) Manager stated the eggs were placed inside unit from walk-in cooler approximately two hours prior and placed them into the freezer to cool to 41F. Inside reach-in cooler at server station: cottage cheese (53F - Cold Holding). Inside make-table at cookline: sliced tomatoes (56F 11:00, 50F 12:25 - Cooling); diced tomatoes (59F 11:00, 46F 12:25 - Cooling). Manager added bags of ice to tomatoes during this inspection.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Can opener blade soiled with food debris on prep table in kitchen near dish machine. **Repeat Violation**

27-16-4    Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Hot water valve turned off at handwash sink in kitchen near cookline. **Repeat Violation**
