A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed reach in cooler two glass doors at 60°F. **Warning**
Basic - Floor not cleaned when the least amount of food is exposed behind reach in coolers, shelves and cooking equipment throughout the kitchen and storage room. **Warning**
Basic - Hole in or other damage to wall. Observed a hole behind the shelves at preparation table. And two more holes behind reach in cooler and reach in freezer at kitchen area. And hole under the counter at front counter. **Warning**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed cooked beef stored next to raw chicken at reach in freezer.

Observed white rice (55 F - Cold Holding); cooked Mac and cheese (47 F - Cold Holding); cooked beef (48 F - Cold Holding); cooked pork (70 F - Cold Holding); cooked oxtail (57 F - Cold holding) rice with beans (57 F - Cold Holding) as per operator were made yesterday. **Warning**
