Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-11-4    Basic - Floors not maintained smooth and durable. Observed at the cookline.
08B-38-4    Basic - Food stored on floor. Observed box containing mangoes stored on the floor of the walk-in freezer. **Corrected On-Site**
14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. Observed for the standing unit,kitchen and chest unit at the bar.
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Observed at the pizza station. **Corrected On-Site**
16-38-5    Basic - Inaccurate/damaged temperature and/or pressure gauge(s) on dishmachine.
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior of ovens soiled,by the cookline,
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed reach in cooler gaskets soiled with accumulation of food debris, drawer units at the cookline. Observed exterior of bulk bins soiled.
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed below dish machine.
22-56-4    Intermediate - Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Observed rinse temperature at approximately 100F Operator set up 3 compartment sink and called service technician. **Corrective Action Taken**
16-62-1    Intermediate - No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed in the kitchen. **Corrected On-Site**
