Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Observed two wet wiping towels on preparation table.
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. Observed two cans with spaghetti sauce dented stored next to tomato paste cans at storage shelf preparation area. Manager segregated the two cans. **Corrected On-Site**
12A-10-4    High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed an employee touching her face and proceeded to handled clean single service items without washing hands. Manager was informed and employee went to wash her hands. **Corrected On-Site**
22-45-4    High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed the employee at three compartment doesn't know the correct use of the three compartments sink. Employee was instructed and the containers were returned to be sanitized. **Corrective Action Taken**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed slices of Turkey (70-69 F - Cold Holding) at shelf in front of hot box. As per operator for less than one hour. Manager moved the product to the walk in freezer for rapid cooling. Final temperature slices of Turkey (42 F - Cold Holding). **Corrected On-Site**
41-15-5    High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed chlorine sanitation solution at + 200ppm. Operator change the sanitizer solution. Final concentration **Corrected On-Site**
53B-15-4    Intermediate - Employee has not received adequate training related to their assigned duties as evidenced by lack of general knowledge in performing their assigned duties. Observed the employee at three compartment sink washing container doesn't know the correct way to used the three compartments sink. Employee was instructed how to use the three compartments sink. **Corrected On-Site**
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Observed the hand wash sink blocked by plastic containers. Operator moved the containers. **Corrected On-Site**
51-16-7    Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days.
