Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling vents dusty in back room prep area. **Repeat Violation**
10-12-5    Basic - In-use ice scoop stored on soiled surface between uses. Observed ice scoop stored in soiled holder. Manager cleaned holder during inspection. **Corrected On-Site**
29-49-6    Basic - Standing water in bottom of reach-in-cooler. Observed standing water in reach in close to office at entrance of kitchen. Manager removed water from reach in. **Corrected On-Site**
01B-24-5    High Priority - Ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days after opening/preparation. See stop sale. Observed Duxelles dated 7-10-2023 (mushrooms sautéed). Manager removed and discarded.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed on cook line in ice pan House made Cole slaw (65F - Cold Holding); House made pico (64F - Cold Holding). Employee stated both were placed in ice bath at 12pm. Employee placed both in reach in cooler. **Corrective Action Taken**
22-31-4    Intermediate - Non-pitting surface rust on food-contact equipment. Observed ice machine with rust buildup along splash guard of unit.
