Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Damaged/spoiled/recalled food not properly segregated. There is a severely dented can of tuna on a shelf in dry storage not segregated from undamaged cans. See stop sale.
Basic - Wet wiping cloth not stored in sanitizing solution between uses. There us a wet wiping cloth on top of the fire extinguisher next to the hand washing sink at the back door.
High Priority - Dented/rusted cans present. See stop sale. Damaged/spoiled/recalled food not properly segregated. There is a severely dented can of tuna on a shelf in dry storage not segregated from undamaged cans.
High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee moved a garbage can then wiped a counter with sanitizer without washing their hands and changing gloves. Operator spoke with the employee about proper hand washing, employee changed gloves washed their hands. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Dishwasher (Chlorine 0ppm) , operator will wash in the dishwasher and sanitize in the triple sink. **Corrective Action Taken** **Warning**
Intermediate - Handwash sink not accessible for employee use at all times. There is a pitcher in the hand washing sink in the pantry area. Operator removed the pitcher.
Intermediate - No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. **Warning**
