A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling tiles in back storage area soiled with a mold-like substance. **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine testing at 0ppm. Operator set up manual sanitation. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw eggs over single use mustard packages and feta cheese. Operator moved for proper storage. **Corrected On-Site** **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced turkey (47F - Cold Holding); cut tomatoes (50F - Cold Holding); hard cooked eggs (60F - Cold Holding); shredded cheese (47F - Cold Holding); cooked meatballs (48F - Cold Holding) in fist reach in cooler on cook line for one hour per operator. Operator put items on ice for cooling and proper storage. **Corrective Action Taken** **Warning**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chemical test kit for dish machine. **Warning**
Intermediate - Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed water shut off to hand wash sink near cook line. Operator turned water back on. Repeat 2/21/2023. **Repeat Violation** **Warning**
