Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-74-7    Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed items prepped today, not yet at 41F, in the walk-in cooler. Egg roll reading 49F. Cooler was running "colder" this morning, no written documentation. Thermometer at the exit of the cold air reads 42F, probe thermometer reads 49F. Technician called. Items prepped this morning were in the walk-in cooler, were placed on the cook line this morning. Items in the make table there from yesterday pork 38F, chicken 39F. Items from the walk-in cooler shrimp 47, chicken 49, beef 44F, **Warning**
10-17-4    Basic - In-use knife/knives stored in cracks between pieces of equipment. Observed a cleaver stored between cook line equipment.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the cook line make table: chicken 49, shrimp 47, chicken 44, beef 44, pork 45F, ice will be employed to cool. ALSO, egg rolls in the walk-in cooler 49F. **Warning**
53B-14-5    Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed 1 expired card.
45-02-4    Portable fire extinguisher gauge in red zone. For reporting purposes only. Observed the fire extinguisher by the front door indicates a recharge is necessary.
