Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-20-4    Basic - Damaged/spoiled/recalled food not properly segregated. 3 cans, 345 ounces, of ketchup are dented at the seams in storage rack in rear of kitchen and not segregated.
12B-07-4    Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee beverage on prep table in rear of kitchen by mixer. Manager removed. **Corrected On-Site**
40-06-5    Basic - Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. Employee cell phone on prep table in rear of kitchen by mixer. Manager removed. **Corrected On-Site** **Repeat Violation**

06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Frozen shrimp,thawing in standing water in prep sink in rear of kitchen by dishwasher. Manager drained standing water and ran under cold running water. **Corrected On-Site** **Repeat Violation**
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Wiping cloth solution in kitchen at 0 ppm chlorine. Discussed using quaternary solution as it is in use at three compartment sink and comes in pre measured. Manager corrected to 200 ppm quaternary. **Corrected On-Site**
21-38-4    Basic - Wiping cloth sanitizing solution stored on the floor. Wiping cloth solution stored on floor of kitchen. Inspector discussed using double bucket method with manager. **Repeat Violation**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Sugar, flour and bread crumbs removed from original containers and not labeled in middle prep area. Employee labeled. **Corrected On-Site**
01B-01-4    High Priority - Dented/rusted cans present. See stop sale. 3 cans, 345 ounces, of ketchup are dented at the seams in storage rack in rear of kitchen and not segregated.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine outside of office area sanitizing at 0 ppm chlorine. Employee removed empty chlorine sanitizer bucket and put on full chlorine sanitizer.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw shelled eggs over ready-to-eat custard and chocolate in 3 door reach in cooler in rear of kitchen. Manager stored correctly. **Corrected On-Site**
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Macaroni and cheese cooling in large deep pan in reach in cooler in rear of kitchen. Manager moved to walk in freezer.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Potato masher in rear of kitchen by ice machine has food debris buildup. **Repeat Violation**
