Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-39-4    High Priority - Chlorine sanitizer in bucket not at proper minimum strength. Chlorine sanitizer bucket at 0 PPM. Employee replenished bucket to 50 PPM. **Corrected On-Site**

12A-27-4    High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Employee cracked multiple raw shell eggs into a container and begin engaging in food preparation without handwashing and changing gloves.

02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Gallon of milk stored in reach in cooler at server wait station not date marked.
12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Employee rinsed hands in three compartment sink in kitchen cook line area. Educated employee on using designated hand sinks for hand washing. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Can opener soiled with food debris. Soda nozzles and outer area of dispenser soiled with mold like debris. **Repeat Violation**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Cooked lasagna and cooked stuffed pork chops not date marked in walk in freezer.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Unlabeled chemical spray bottle stored under kitchen cook line.
