A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Clean utensils or equipment stored in dirty drawer or rack. Large ladle stored on food storage shelving in back room, operator removed to dishwashing station.
Basic - Equipment and utensils not properly air-dried - wet nesting. Cups stacked while still went in the first wait station. Removed by operator **Corrective Action Taken** **Repeat Violation**
Basic - Food-contact surface not smooth and easily cleanable. Gallon plastic bottle being reused for sauce prepared in house, gallon bottle observed with hollow handle, not to be reused, one time use only.
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood and hood filters heavily soiled, operator has been trying to get schedule for cleaning for over 2 weeks. Metal wire shelving in walk in cooler soiled with old food debris
Basic - Raw fruits/vegetables washed prior to preparation with stickers still attached to washed avocados at the sushi bar, items moved to kitchen to remove labeling and rewash. **Corrective Action Taken**
Basic - Unwashed fruits/vegetables stored with ready-to-eat food. Unwashed mushrooms stored above ready to eat sauces and washed produce in walk in cooler , corrected by operator **Corrected On-Site** **Repeat Violation**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Hand wash sink near cooks line/ dish washing station, corrected **Corrected On-Site** **Repeat Violation**
