Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed near walk in cooler.
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed near fryer at cook line. Also observed walls and ceiling vent at ware washing area soiled with black substance.
10-12-5    Basic - In-use ice scoop stored inside soiled container on ice machine at kitchen. Manager took container to wash, rinse and sanitize. **Corrective Action Taken**
10-20-4    Basic - In-use tongs stored on oven door handle between uses at cook line. Manager removed tongs. **Corrected On-Site**
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in reach in cooler at server's station. **Repeat Violation**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed hood filters soiled with accumulated grease.
22-49-4    High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine dishwasher machine at 0ppm. Manager primed line, final reading 100ppm. **Corrected On-Site**
