that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

High Priority - Time/temperature control for safety food prepared from/mixed with ingredient(s) at ambient temperature not cooled to 41 degrees Fahrenheit within 4 hours.
Front counter - glass door - pikliz - cooling for 3 hours at 2pm (51F - Cooling) at 2:35pm 52F. Reviewed proper cooling procedures and operator moved item to prep area reach in to quick chill. **Corrective Action Taken** **Warning**
