Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
-Observed accumulation of black mold like substance buildup inside ice machine. **Repeat Violation** **Warning**
Basic - Employee with no hair restraint while engaging in food preparation.
-Observed 2 employees engaging in food preparation with no hair restraint. **Warning**
Basic - Working containers of food removed from original container not identified by common name.
-Observed flour removed from the original container not identified by common name. **Warning**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.
-Observed chlorine sanitizer solution at dishwashing machine at 00 ppm. **Warning**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
-Observed chef change gloves after touching garbage container, changed gloves without washing hands and continued to engaged in food preparation. **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
-Observed raw beef stored over empanadas in walk-in freezer. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
-Observed seafood mixture cold held at 47°F in flip top cooler. Per operator, item placed in unit 35 minutes prior to the inspection. Operator placed ice pack on item for quick chill. **Corrective Action Taken** **Warning**
Intermediate - Employee washed hands in a sink other than an approved handwash sink.
-Observed employee washed hands in 3 compartment sink. **Warning**
Intermediate - Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Observed handwash sink in kitchen removed. **Warning**
