A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils.
Employee drink on prep table next to steam table. Employee removed drink. **Corrected On-Site**
High Priority - Employee began working with food, handling clean equipment or utensils, or touching unwrapped single-service items without first washing hands.
Employee entered kitchen from outside and began handling food in walk-in cooler without washing hands. Manager had employee wash hands. **Corrective Action Taken**
High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure.
Employee touched ice in ice bin behind front counter.
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit.
Items in walk-in cooler: chicken (47F - Cold Holding); pork (46F - Cold Holding); beef (48F - Cold Holding); butter (47F - Cold Holding); milk (46F - Cold Holding). Manager stated items were at proper temperature at opening, door propped open for awhile. Ambient temperature in walk-in cooler 41F. Manager placed items in reach-in freezer to reduce temperature to 41F. **Corrective Action Taken** **Warning**

Bleach stored next to bottled water in front counter area. Manager moved bottle of bleach. **Corrected On-Site**
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed.
Sanitizer bucket underneath three compartment sink, 200+ ppm. Employee added water to bucket, 75 ppm. **Corrected On-Site**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
No hand towels at kitchen hand washing sink. Employee provided hand towels at sink. **Corrected On-Site**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
Chicken, beef, and turkey in walk-in cooler. Manager stated was prepared the previous day.
