A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed grooved cutting board on flip top cooler. **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Observed gap on right bottom of exterior dining room door exit. **Repeat Violation**
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed missing floor tiles throughout kitchen. **Repeat Violation**
08B-36-4    Basic - Food stored in a location that is exposed to splash/dust. Observed handsink adjacent to open spice pans. Recommend splash guard on sink.
08B-38-4    Basic - Food stored on floor. Observed bin of beans stored on the floor in back storage room.
36-68-5    Basic - Hood ventilation system inadequate as evidenced by grease accumulation on walls/ceiling. Observed grease buildup on hood system.
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed some coolers with no ambient thermometers in place.
35B-03-4    Basic - Outer openings not protected with self-closing doors. Observed no self closing door hardware on rear exterior kitchen door.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed wall above rear doorway with heavy grease buildup.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. Observed wet mop in bucket of dirty water.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Some squeeze bottles not labeled throughout kitchen **Repeat Violation**
11-27-4    Intermediate - Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea discharged onto surfaces in the establishment. Observed no written plan in place.
05-08-4    Intermediate - No probe thermometer provided to measure temperature of food products. Observed no probe thermometer on site.
11-26-1    Intermediate - No proof provided that food employees are informed of their responsibility to report to the person in charge information about their health and activities related to foodborne illnesses. Observed no written plan in place for employees. **Warning**
