A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor soiled/has accumulation of debris under cooking equipment in prep kitchen, front line and bar areas. Repeat 3/20/2023. **Repeat Violation** **Warning**
High Priority - Operator not complying with the procedures stated in the variance or HACCP plan approved by the Division of Hotels and Restaurants. Operator is not filling out temperature logs as indicated in approved plan. **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found. In dry storage across from office, 2 on shelves, 3 in coffee bag container, 8 in far back corner. 6 in employee bathroom. 4 on floor of boiler room, also chew marks present, 6 on containers on rack in boiler room. 8 in liquor storage room. 11 on wooden shelving on service side of cook line in dining room, 7 on counter above around computer . Under high chairs in corner dining room, 7 droppings. On and under chairs in front part of side dining room, 16 observed. Under large round table in corner of dining room, 18 observed, also chew marks present. **Warning**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. In back prep kitchen, can opener blade and slicer soiled with accumulated food debris. **Warning**
