Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-09-1    Basic - commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. From reach-in cooler 8 commercially reduced oxygen packaging mahi mahi fish bearing labeled to remove from packaging when thawing.
08B-56-4    High Priority - Food stored in ice used for drinks. See stop sale. Multiple employee beverages stored in ice used for drinks in ice machine located in rear of establishment. 03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Flat-top grill at 11:35am a. butter (93F - Hot Holding) Discussed adding butter to time as a public health control paperwork as an option. Operator added butter to time as a public health control and time-marked item. **Corrected On-Site**
12A-03-4    Intermediate - Employee washed hands in a sink other than an approved handwash sink. Observed employee wash hands in three-compartment sink. Discussed with operator purpose of washing hands in approved hand wash sink. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Cutting board on reach-in cooler on cooks line soiled. Meat slicer used more than 4 hours ago soiled with food debris.
