A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Buildup of food debris/soil residue on equipment door handles. Observed buildup of food debris on walk in cooler and reach in cooler door handles. **Repeat Violation**
Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. Observed ceiling tile textured and not easily cleanable.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling tiles with build up of dust/ grease/ food debris like substance. **Repeat Violation**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed built up of food debris and mold like substance on fan blade covers in walk in cooler walk in cooler/freezer doors and walk in cooler/freezer door gaskets.
Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed rust on shelves in walk in cooler and walk in freezer.**Repeat Violation** **Repeat Violation**
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed employee crack raw eggs then handle ladle without washing their hands first.
Intermediate - Handwash sink not accessible for employee use at all times. Observed Hand washing sink not accessible due to fryer oil stored on wood shelf in front of sink.
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no,chemical test strips for chlorine at time of inspection. **Repeat Violation**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed food in walk in cooler and walk in freezer prepared over 24 hours according to the operator with no date marking. **Repeat Violation**
