Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-20-5    Basic - Accumulation of black/green mold-like substance in the interior of the ice machine/bin.
14-01-5    Basic - Bowl or other container with no handle used to dispense food. Bowl Used for coleslaw at cook line.
23-24-4    Basic - Buildup of food debris/soil residue on equipment door handles. Handle of reach in cooler soiled at cook line.
12B-01-4    Basic - Employee eating while preparing food. Cook cooking chicken eating chips. Educated cook.
10-08-5    Basic - Ice scoop handle in contact with ice at bar.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. Wet wiping cloth stored on prep table at cook line.
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Cook prepared a chicken salad he put diced tomatoes on salad with bare hands. Educated bare hand contact. Threw salad away and washed hands.

01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Liquor bottles stored in ice used for drinks in both ice bins at bar.
