Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

21-08-4    Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. Observed wiping cloth solution at 500ppm, exceeding the maximum concentration allowed, stored under kitchen prep counter. **Warning**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed squeeze bottles of oil and saffron stored near top counter steamtable, not labeled. **Warning**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer at 0ppm at dish machine located at kitchen area. Establishment has a three compartment sink using quaternary sanitizer, setup at time of inspection. Advised to Manager to manual sanitize utensils/dishware/kitchen equipment at three compartment sink until dish machine is sanitizing properly. **Warning**
08A-04-5    High Priority - Raw animal food stored over or with unwashed produce. Observed raw beef and whole tomatoes stored in the same container located at reach in cooler drawer, across from cookline. Chef discarded all tomatoes. **Corrected On-Site** **Warning**

Observed shredded cheese (50F - Cold Holding); pickled onions (46F - Cold Holding) located at top portion of prep cooler due to double panning of food containers, less than 4 hours. Chef removed second pan and stored food containers directly into cooler unit. Observed raw steak (50F - Cold Holding); caramelized onions (49F - Cold Holding); lemon ricotta cheese (46F - Cold Holding); goat cheese (46F - Cold Holding); diced tuna (45F - Cold Holding); diced swai (42F - Cold Holding) all located at top portion of reach in cooler unit in front of grill at kitchen cookline, less than 4 hours. Advised to submerge food containers in ice for rapid cooling. Observed raw beef burgers (51F - Cold Holding); marinated beef (58F - Cold Holding) located at reach in cooler drawers under kitchen cookline, less than 4 hours.
