A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. Observed textured ceiling tiles in kitchen above cook and prep areas. **Repeat Violation**
Basic - Employee with no hair restraint while engaging in food preparation. Observed employee preparing food with no hair restraint. **Repeat Violation**
Basic - Food being prepared outside. Observed refried beans being prepared outside on propane grill in 32 quart approximate size metal pan with lid. **Admin Complaint**
Basic - No handwashing sign provided at a hand sink used by food employees. Observed no employee hand wash signs present in restroom used by employees.
Basic - Unpackaged food not protected from environmental sources of contamination during preparation. Observed refried beans being boiled on propane grill behind restaurant with no over head protection **Admin Complaint**
Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chlorine test kit available for checking sanitizer levels. **Repeat Violation**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed food prepared over 24 hours being stored in reach in refrigerator without date marking, discussed with owner the importance of date marking food and length of time cooked food may be held. **Repeat Violation**
