A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises.
1) In back store room behind kitchen, one dead roach in bulk container of breadcrumbs; two dead roaches in container of corn meal; two dead roaches in container of seasoned flour; and one dead roach in container of plain flour.
2) Two dead roaches on floor in back store room behind kitchen.
Manager discarded food items and removed dead roaches from floor, cleaned and mopped floor. **Warning**
Basic - Single-service articles not stored inverted or protected from contamination.
Foil to go containers on shelf in back store room all stored right side up. Manager inverted alto properly store. **Corrected On-Site** **Warning**
Basic - Stored food not covered.
Bulk containers of flour, seasoned four, cornmeal, and breadcrumbs in back store room not fully covered; cans do not have tight fitting lids. **Repeat Violation** **Warning**
Basic - Working containers of food removed from original container not identified by common name.
Bulk containers flour, seasoning mix, cornmeal, and breadcrumbs in back store room not labeled. **Warning**
High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food.
Employee on cook line left cook did not wash hands before replacing gloves after changing batteries in soap dispenser. Reviewed proper hand washing procedures with manager and employee washed hands. **Corrected On-Site** **Warning**
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged.
In kitchen reach in freezer box of breaded raw calamari on top shelf above containers of cooked chicken, conch fritters, and hush puppies. Manager moved calamari to bottom of cooler. **Corrected On-Site** **Warning**
High Priority - Raw animal food stored over/not properly separated from ready-to-eat food.
In walk in cooler, container with whole raw fish above container of fried chicken wings. Manager moved fish to bottom of shelf with other raw seafood items. **Corrected On-Site** **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
In back store room behind kitchen one live roach in container of breadcrumbs and two live roaches in container of cornmeal.
Manager discarded all items and left containers outside to clean and sanitize. **Warning**
High Priority - Stop Sale issued due to food not being in a wholesome, sound condition.
1) In back store room behind kitchen, one live roach in container of breadcrumbs and two live roaches in container of cornmeal.
2) In back store room behind kitchen, one dead roach in bulk container of breadcrumbs; two dead roaches in container of corn meal; and two dead roaches in container of seasoned flour. **Warning**
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed.
Sanitizer bucket in kitchen at 200ppm chlorine. Manager remade to proper 100ppm chlorine. **Corrected On-Site** **Warning**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
At hand wash sink in back of kitchen. Manager replaced paper towels. **Corrected On-Site** **Repeat Violation** **Warning**
Intermediate - Soap dispenser at handwash sink not working/unable to dispense soap.
Dispenser at back kitchen hand sink not operating properly. Employee replaced batteries and dispenser working. **Warning**
