Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Wall soiled with accumulated grease, food debris, and/or dust.
-Observed accumulation of black mold like substance buildup on walls throughout kitchen. **Warning**
High Priority - Dented/rusted cans present. See stop sale.
-Observed 2 dented cans with country sausage gravy in dry storage. Operator informed and stop sale issued. **Warning**
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands.
-Observed chef cracked raw shell eggs then touched cheese without changing gloves and wash hands. After educate chef, he changed his gloves and wash his hands **Corrected On-Site** **Warning**
High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
-Observed 7 live flying insects landing on walls in dishwashing area. **Repeat Violation** **Admin Complaint**
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit.
-Observed sausage hot held on griddle at 122 degrees Fahrenheit. Per operator, sausages reheat and placed on grill 30 minutes prior to inspection. Operator reheat to 169F. **Warning**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
-Observed accumulation of black mold like substance buildup on can opener blade. **Warning**
Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked.
-Observed no date marked on cooked ribs stored in walk-in cooler. Per operator, item cooked on 01/22/2024. **Warning**
Intermediate - Required employee training expired for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed some employees training certification expired on 10/18/2019. **Warning**
Intermediate - Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained.
-Observed some employee training certification photocopies . Not original document. **Warning**
