Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

35A-03-4    Basic - Dead roaches on premises. Observed 1 dead roach under 3 compartment sink along the wall. Person in charge had disposed of roach. **Warning**
14-11-5    Basic - Equipment in poor repair. Gaskets on make cooler #2 are torn. Also, white chest freezer interior lid is broken.
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Grease on floor behind cookline. **Repeat Violation**
36-24-5    Basic - Hole in or other damage to wall. Hole in kitchen door leading to dining room.
10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Scoop handle in cornmeal.
08B-12-5    Basic - Stored food not covered. Flour/sugar not covered. Chicken in reach in cooler not covered. Person in charge covered all. **Corrected On-Site**

29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing on black hose at mop sink.
02C-03-5    Intermediate - Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. In glass cooler; cream, milk not dated. Person in charge dated both items. **Corrected On-Site** **Repeat Violation**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Pitcher in dish machine hand washing sink at back of kitchen. Person in charge removed pitcher. **Corrected On-Site**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No soap or paper towels at hand washing sink in back. Person in charge replaced both. **Corrected On-Site**
