Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

16-21-4    Basic - Accumulation of debris on exterior of warewashing machine. Observed flour build up on the top of the dishwasher. Operator wiped down the top. **Corrected On-Site**
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed dust build up on multiple ceiling vents in the establishment.
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Observed multiple employee working with food not wearing hair restraints. Operator had them put on hair nets. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Corrected On-Site** **Repeat Violation**
35B-02-4    Basic - Insect control device installed over food preparation area. Observed a insect control device stored over customer drink cups and the soda machine.
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed chlorine sanitizer bucket at 50ppm. Operator added more chlorine and retested at 100ppm. **Corrected On-Site**
08A-20-5    High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken stored over raw shrimp in the left side reach in cooler. Operator moved the chicken. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soil build up on can opener. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee. **Repeat Violation**
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed operator use the hallway hand wash sink to rinse a pizza cutter. Instructed operator on the proper use of the hand wash sink. **Corrective Action Taken**
