The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - - From initial inspection : Basic - Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired.
Reach-in cooler across from pizza oven unable to maintain temperature of 41F and below. Observed middle door in disrepair and water in bottom of cooler. Employee put ice in bottom of cooler to chill foods but ambient temperature is 48F **Warning** - From follow-up inspection 2023-09-29: At callback no TCS foods in reach-in cooler. Ambient temperature 44-48F. Operator stated he has someone coming to service cooler. **Time Extended** **Corrective Action Taken**
High Priority - - From initial inspection : High Priority - Live, small flying insects in kitchen, food preparation area, food storage area and/or bar area.
Observed approximately 26 flying insects in the following areas: 10 near the clean storage shelf for pots and pans, 4 in the bar area, 5 in dry food storage area, 6 in the dishwashing area, and 1 on counter at front service line at container of oil for bread. Operator stated he will call Orkin **Repeat Violation** **Admin Complaint** - From follow-up inspection 2023-09-29: At callback observed one flying insect near front service line. Operator had Orkin treat restaurant this morning. **Admin Complaint** **Corrective Action Taken**
