Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-01-5    Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. 1. Ice scoop handle in direct contact with ice. 2. Corn meal scoop handle in direct contact with corn meal.
16-46-4    Basic - Old labels stuck to food containers after cleaning, metal pan stored above warewash sink with cleaned utensils. Operator removed label and placed pan at the warewSh sink to be recleaned. **Corrected On-Site**
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses.wet wiping cloth stored on food prep table next to cookline. Operator removed. **Corrected On-Site**
03A-03-5    High Priority - Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Raw shell eggs 75F, stored on a food prep counter opposite the cookline under no temperature control. Placed on counter less than three hours ago per operator. Operator placed into reach in cooler to quick chill **Corrective Action Taken**
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Chlorine sanitizer solution in the bucket test at over 200 ppm. Operator remade solution, tested at 100 ppm. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris. Can opener blade at food prep table in the kitchen. **Repeat Violation**
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. **Repeat Violation**
