A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed em beverages on counters throughout kitchen. Observed operator move beverages. **Corrected On-Site** **Warning**
Basic - Floor soiled/has accumulation of debris under and behind equipment in kitchen. Observed Walk-in cooler floor soiled under shelfs and buildup in tiles. **Warning**

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed mold-like substance on hose line and walls on beer Walk-in cooler. **Warning**
High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed 20 quqrts of Beef Shepard pie filling in Walk-in cooler at 57F. Operator stated it was made the day before more then 24 hours prior and placed into Walk-in cooler. Observed operator voluntarily dispose of beef shepherd pie filling. **Corrected On-Site** **Warning**
High Priority - Dishmachine at bar chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Instructed operator to use kitchen dishwasher till bar dishwasher is repaired. **Warning**
High Priority - Roach activity present as evidenced by live roaches found. Observed 1 live roach on wall near hand wash sink by dishwasher area. **Warning**
High Priority - Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed 20 quarts of Beef Shepard pie filling in Walk-in cooler at 57F. Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed ribs, beef shepherd pie filling, and soup all prepared onsite more then 24 hours prior as per employee statement not date marked. **Warning**
