Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Observed flip-top cooler in kitchen at ambient 55F. Gaskets heavily torn. Person in charge stated top of flip-top cooler left open without containers.
14-11-5    Basic - Equipment in poor repair. Observed gaskets on flip-top cooler heavily torn
08B-38-4    Basic - Food stored on floor. Observed case of milk on walk-in cooler floor. Observed case of plastic water bottles on floor in dry storage.
36-24-5    Basic - Hole in or other damage to wall. Observed newly renovated tile walls in kitchen in disrepair. Some tiles falling off wall. Missing grout making walls not smooth or easily cleanable.
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed original hand washing station near walk-in cooler missing hand washing sign. Observed newly added hand washing station by newly added kitchen entrance missing hand washing sign. Person in charge has them on order. **Corrective Action Taken**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed gaskets on flip-top cooler heavily soiled with food debris.
25-05-4    Basic - Single-service articles improperly stored. Observed four cases of singles service cups and lids stored on floor under prep table.
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw bacon above ready to eat milk, and fully cooked sausage patties. Person in charge moved bacon to bottom shelf. **Corrected On-Site**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed fully cooked eggs (59F - Cold Holding) left on cutting board for one hour per kitchen employee. Person in charge placed in cooler too cool. Observed flip-top cooler butter (55F - Cold Holding). Person in charge moved butter to walk-in cooler. Butter placed in flip-top cooler this morning per person in charge. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed multiple cutting boards stained with food debris and black streaks.
53A-02-7    Intermediate - Manager or person in charge lacking proof of food manager certification and no other certified food service manager employed at this location. Observed no certified food manager certification. Person in charge has taken test and is awaiting results. **Corrective Action Taken** **Warning**
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Observed no chlorine or quat test kits. For triple sink and dish machine.
51-14-7    Intermediate - No plan review submitted and approved - bar area removed. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. The direct link to the Plan Review page is https://www2.myfloridalicense.com/hotels-restaurants/licensing/plan-review/. Observed kitchen and dinning area fully renovated. Bar, and bar hand washing stations are fully removed. **Warning**
53B-13-5    Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed some employees missing certified food handler training.
